David Burke Prime's Table Side Smoked Manhattan and Aged Steak Flight

Oscar Worthy Presentation at David Burke Prime


As my foodie fortune would have it, I was included in an invite to sample David Burke Prime's new specials at their Foxwood Resort Casino location joining my friends Greg and Wendy from CTLifestyles.

With just one look at Prime's spacious entryway, you know you are in for a great dining experience that highlights a wonderful meal in an entertaining fashion. A life-size model steer greets you upon arrival, lighting is a soft amber tone, and there are large comfortable cowhide covered banquettes and comfy white leather over-stuffed chairs for seating.



Open at Foxwoods since 2008, Prime is operated by the Craveable Hospitality Group, who manage ten restaurants in the Connecticut, New York, New Jersey, Chicago, and Aspen area. I can certainly see how they penned the motto "Eat, Drink, Crave" - as they are known for "transforming each meal into a cherished memory" by offering impeccable service and creative food and beverage offerings.

We started with some delicious sparking rosé to go along with this amazing seafood tower featuring lobster , shrimp, clams, oysters, Alaskan king crab legs, jumbo lump crab meat, served with sauces like old bay mustard sauce, sweet chili cocktail, mignonette, and more!

And it just kept getting better and better from there!

Next our mixologist extraordinaire gave us the premiere performance of Prime's new amazing cocktail, the Smoked Rosemary Manhattan.

This cocktail tastes just as amazing as its preparation shows!  And I love these new jumbo ice cubes as they hold the 'chill' longer and allow the cocktail to shine and not hamper the flavor with melted ice. The Smoked Rosemary and Orange Manhattan was so subtly smooth with the added aromatics of the rosemary and the citrus essence from the fresh orange. Made with premium rye - it's a definite win-win!

In addition to the table side cocktail presentation we were also treated to a table side preparation of a Caesar Salad, complete with white anchovies, Prime's signature crab croutons, and thickly grated cheese.

Next was another fun little treat! A clothesline of candied bacon! The Clothesline Bacon appetizer consists of  extra thick-cut candied bacon, black pepper maple glaze, and flambéed table side, as well!

Next was the star of the show  - the Aged Steak Flight! This fabulous new special allows you to sample not one, not two, not three, but FOUR different styles of aged beef. This special Steak Flight includes a sampling of the 30-day bone-in Kansas City strip, 40-day ribeye, 60-day sirloin, and 75-day rib-eye. These hand-selected beef cuts are aged in their patented Himalayan salt lined aging cooler which allows them to develop the deep intense flavors that only aged beef offers.

As is typical with aged beef - the longer it is aged the more intense and earthy the flavor. As we worked our way around the plate sampling the different aging times, we couldn't all agree on a 'hands down' favorite. Each cut was delicious in its own right - and each of us had different flavor preferences. Suffice it to say - they were all great!

After all that sampling - we somehow found room for dessert! We nibbled on the Cheesecake Lollipop Tree complete with sour apple cotton candy (say what!!) .... before digging in to our final table side presentation of Toffee Monkey Bread made with banana, pecan brioche, bourbon-butterscotch ice cream. No descriptive adjectives needed. So good!!!

Another favorite - the Molten Chocolate Cake, made with a deep, rich chocolate cake, a chocolate ganache filling, and served with a side of creamy coffee gelato.

We finished the night with a tour of the dry aging room and the wine tower. Both spaces were equally incredible and that wine tower alone is worth a visit on your next trip to David Burke Prime at Foxwoods Resort Casino.

Attendees at Fresh Salt's upcoming wine pairing dinner will enjoy a distinctive culinary journey featuring one of the world’s finest wines from the renowned Napa Valley winery, Robert Mondavi. You know this dinner is going to be extra special as the winery is also celebrating their 50th Anniversary!

The dinner will take place on Saturday, February 1lth and will feature the exquisite creations of Chef d’ Cuisine Gesé Rodriguez.

The evening begins with a cocktail hour at 6:30 p.m. featuring Potato Wrapped Shrimp, Scallion-Potato Cake topped with Tuna Tartar, Mushroom Croquettes, and Prosciutto-Mascarpone Tart, served with a Prima Perla Prosecco, Italy DOCG Treviso.

The five-course dinner will follow at 7:00 p.m. with Pan-roasted Barramundi Fillet, which includes Lobster Risotto, Grilled King Oyster Mushroom, and Sweet Pea Sauce, paired with Robert Mondavi Napa Valley Fumé Blanc 2014.

For the second course, Chef Rodriguez will feature Porcini-crusted Veal Loin with Sweet Potato Ravioli, Caramelized Fig, Baby Zucchini, and Bourbon-Chestnut Sauce, paired with Robert Mondavi Special Selection Pinot Noir 2015.

 With the third course, guests will enjoy Scallop & Bacon – Pan-seared Scallop, Braised Pork Belly, Cauliflower-Potato Puree, Honey-roasted Baby Carrot and Plum-Merlot Sauce, paired with Robert Mondavi Chardonnay, Napa Valley 2014.

The fourth course will showcase a delicious cut of Wagyu Flat Iron Steak with Crispy-fried Yucca, Morel Mushroom and Foie Gras-Grand Marnier Butter, paired with Robert Mondavi Cabernet Sauvignon, Napa Valley 2014.

The evening concludes with the fifth and final dessert course, a Vanilla-Poached Pear layered with Mango Curd, Cream Cheese and Vanilla Sauce paired with Robert Mondavi Moscato d’Or, Napa Valley 2014.

The Robert Mondavi Wine Dinner at Saybrook Point’s Fresh Salt is $109/person plus tax and service charge.

Shell and Bones Clam Chowder Recipe

New England Clam Chowder Recipe!




Did you know that there is a National Chowder Day?  Now, rumor has it that France started this delicious holiday. (The French really know how to celebrate food, don't they!) But we New Englanders take our Clam Chowder to a whole-nother-level!

In any case, I hope you celebrated the holiday and had yourself a heaping hot steaming bowl of one of the best dishes that New England has to offer!

If you weren't able to partake - or if you want to keep the celebration going, I have an award winning New England Clam Chowder recipe for you!

Chef Arturo Franco-Camacho, of Shell and Bones Restaurant in the historic City Point neighborhood of New Haven Connecticut, is known for his attention to classic dishes, and this chowder recipe is no exception.

I first sampled it at ChowdaFest 15 - and waited in line for it at ChowdaFest 16. Its creamy deliciousness was so worth it! Chef Arturo never shies away from bold flavors and this chowder screams deliciousness!

With ingredients including whole fresh clams, bacon, thyme, golden potato and light cream, the recipe won the Big Taste of Greater New Haven 2015 and 2016, and was created by Executive Chef Arturo Franco-Camacho and he has graciously shared it with us!

Now you can create this delicious dish at home! 

Shell & Bones Clam Chowder


1½ cups water
½ cup dry white wine
50 littleneck clams
2 tablespoons unsalted butter
1 tablespoon bacon fat
½ cup diced bacon
1 large Spanish onion, diced
3 garlic cloves, minced
2 cups diced celery
3 sprigs thyme, chopped
2 bay leaves
1½ pounds (about 2 cups) Yukon gold potatoes, peeled, cut into ¼-inch dice
2 cups heavy cream
2 tablespoons parsley, chopped
Salt and pepper to taste
Oyster crackers, Saltines, potato chips for garnish

Pour the water and wine into a large pot. Bring to a boil at high heat. Add clams, cover and cook until they open, about 5 minutes. Remove clams to a bowl. Strain liquid and reserve. When they have cooled, set aside 6 clams in the shell, remove remainder from their shells and cut into small pieces.

Melt butter and bacon fat in a pan over medium heat, add bacon and cook until bacon is crisp, 4-6 minutes. Add onion, garlic, celery, thyme and bay leaves. Saute until onions are translucent, about 4 minutes. Add potatoes, clam juice and heavy cream. Simmer until potatoes are tender, 8-10 minutes. Discard bay leaves. Add chopped clams and parsley, stir and serve.

If serving the next day, remove clams from refrigerator and let them come to room temperature. Reheat soup, return clams to the chowder, stir in parsley and adjust seasoning with salt and pepper.

Serve with crackers, Saltines or potato chips. To garnish, place a reserved clam in the shell on top of each bowl. Sprinkle crispy bacon on top if desired.

Makes 6 servings.

The Cottage in Westport CT has Expanded

The Cottage just keeps getting bigger and better!


Fairfield county restaurants are constantly improving and getting bigger and better than ever! I'm happy to announce the Cottage in Westport, CT has officially opened its additional 800 square feet of space.  The expanded space includes full service dining at their 10-seat bar with a brand new cocktail menu, local draft beers and an expanded wine program.

There is also seating for large parties of 10 at a window seat banquette.  Reservations are accepted for large parties at the banquette, while seating at the bar will be walk-in only.  The bar will be open Tuesday-Saturday from 5:30pm to close, and open for continuous service on Sundays from 11:30am to close.

Special Tribute Dinner to Frank Sinatra


Fresh Salt at Saybrook Point is hosting a special tribute dinner in honor of the legendary performer Frank Sinatra to be held in conjunction with Old Saybrook’s Seaside Wine and Spirits on Saturday, January 21, 2017.

This creative Jack Daniel’s Family of Whiskey Dinner honors the iconic performer’s special relationship with the forerunner location during the property’s 1960's heydays when Sinatra and his “Rat Pack” were regulars at the Terra Mar Hotel & Yacht Basin.

Yes, that's right! Frank Sinatra kept his boat and entertained friends on a regular basis on the property where Saybrook Point Inn and Marina sits today.

At one time it was rumored that Sinatra was interested in purchasing the Terra Mar where Hollywood royalty like Jayne Mansfield and Tom Jones spent time. In fact, parts of the movie Parrish, starring Troy Donohue and Connie Stevens were filmed here. The hotel eventually fell on hard times, was raided twice for illegal gambling, and finally shut down in 1980, owing a large tax debt. Louis and Mary Tagliatela then purchased the unoccupied hotel at auction, and nine years later, the Terra Mar was replaced with the beautiful Saybrook Point Inn.

The Jack Daniel’s Family of Whiskey Dinner will feature a robust selection of single barrel whiskey and rye by one of America’s most iconic distilleries, expertly paired with a hearty selection of fresh seafood, steaks and poultry creatively prepared by Saybrook Point’s talented Private Event and Banquet Chef Bill Titus and Fresh Salt Chef d’ Cuisine Gesé Rodriguez.

The evening begins at 6:30 p.m. with hors d’oeuvres featuring Crabmeat Salad-Sweet Potato Pancake, Assorted Sushi, and Braised Pork Belly with green tomato jam served with a Jacked-Up Cider Cocktail.

The five-course whiskey dinner begins at 7:00 p.m., commencing with a first course of Ceviche Tartare Duo with Scallop-Tuna Citrus Sauce paired with Gentleman Jack.

The second course features a Lamb T-Bone with Lentil Croquette, Trumpet Mushrooms and Marsala Glace paired with Jack Daniel’s Single Barrel Select.

The third and fourth course feature Almond-Crusted Black Pearl Salmon with Sweet Potato and Caramelized Onion Stack paired with Jack Daniel’s Sinatra Select and Roast Loin of Venison with Celery Root-Cauliflower Puree, Pear Chutney and Brussel Sprout Leaves paired with Jack Daniel’s Single Barrel Rye.

The dinner concludes with a Black Jack Cake served with a warm malted barley-dusted pretzel paired with Jack Daniel’s Tennessee Honey Sauce.

Seaside Wine and Spirits from Old Saybrook will be in attendance, and guests can place orders for their favorite whiskey of the evening at specially reduced prices.

Get ready for spring months before the weather warms up at the 36th annual “Connecticut Flower & Garden Show” on Thursday, February 23 through Sunday, February 26, 2017 at the Connecticut Convention Center on 100 Columbus Blvd. in Hartford.

Show Times:

One of the largest and most prestigious flower shows in all of New England, the show’s hours are:

  • Thursday, Feb. 23 from 10 a.m. to 7 p.m. 
  • Friday, Feb. 24 from 10 a.m. to 8 p.m.
  • Saturday, Feb. 25 from 10 a.m. to 8 p.m.
  • Sunday, Feb. 26 from 10 a.m. to 5 p.m.


The colorful, fragrant show covers almost three acres with the 2017 theme, “Woodland Enchantment”, with creative and practical ideas for house, apartment and condo dwellers alike.

 Highlights include:


- Over an acre of gardens in full bloom, created by professional landscape designers and nonprofit organizations, and include naturalistic, low maintenance, native, organic, herb and pollinator gardens.

- The Federated Garden Clubs of Connecticut’s 2017 Advanced Standard Flower Show: more than 12,000-square feet of a design, horticulture and photography competition with more than 250 judged entries, all with the “Woodland Enchantment” theme.

- Over 300 booths of displays, activities and shopping: artisans and handcrafted gifts, fresh flowers, plants, garden ornaments, metalwork sculptures, herbs, bulbs, seeds, fertilizers, soils, gardening books, patio furniture and lawn and garden tools and equipment. Bring a 1/2 cup of soil to the UConn Co-op booth for free soil testing.
