Fresh Salt - Spring Menu 2018

Join me in welcoming Chef de Cuisine Lou-Anne Langlois, a Connecticut native, to Saybrook Point Inn's restaurant, Fresh Salt.

Chef Langlois has designed several new dishes for the Spring Dinner Menu and we couldn't wait to sample some of her new creations. So, on a recent spring night, Wendy and Greg from Connecticut Lifestyles and the cowboy and I decided to take a ride to Old Saybrook and visit Fresh Salt!

Fresh Salt Entrance

If you're not familiar with Fresh Salt, it's the main restaurant at the Saybrook Point Inn & Spa and is situated overlooking the marina and scenic Long Island Sound. Talk about a restaurant with a view!

Here are some of the items on the new menu!

For a fresh new salad there’s the Petite Candy Beet Salad, featuring Candy-Striped Beets, Beltane Farms Goat Cheese, Watermelon Radishes, Beet-Micro Bulls Blood Mix, finished with a Roasted Pistachio Dressing.

In the mood for an appetizer? Try the Hoisin Pork Belly Sliders, with Shaved Jalapeno-Lime Coleslaw, Pickled Onions, Tahini Aioli, Caramelized Onion Naan Bread.

While pondering our order, we started with some of Fresh Salt's signature cocktails before moving on to our appetizers.

For appetizers, we sampled the Fried Oysters, Crispy Duck Wings, RI Clam Chowder, and the evening's special, Gazpacho. They were all so good, but you definitely must try those duck wings and fried oysters when you go!

Rhode Island Clam Chowder

As far as new entrees go, we heard the Grilled Grand Banks Swordfish Loin is quickly becoming a new favorite entree at Fresh Salt, served with a Green Bamboo Risotto, Baby Bok Choy, a Ginger Soy Glaze, topped with Grilled Pineapple-Scallion Salsa. So, of course the Cowboy tried that!

They've got some great new pasta dishes too!

Try the Pan-Seared Stonington Driver Scallops with Fresh Tagliatelle Pasta, Asparagus Tips, Tasso Ham, Spring Onions, Roasted Shallot-Parmigiano Cream, Lemon Zest, and Fresh Chives. Arctic Char, served with Beluga Lentils, Shaved Brussels Sprouts, Bacon, Leeks, Blood Orange-Ginger Sauce, Meyer Lemon Oil, and a Baby Arugula-Blood Orange Salad is another not-to-be missed new menu item.

Of course, neither Wendy or I could resist the pasta dishes, so Wendy went with the Scallops and I went with the Carbonara. Both were absolutely incredibly delicious. The carbonara was creamy rich and sooo good! Wendy's scallops were so sweet and flavorful and the pasta was unbelievably good! Fresh Salt has it going on!

Greg was the evenings traditionalist and went with Fresh Salt's Filet Mignon, perfectly prepared and rested.

Believe it or not we somehow found room for dessert - and there were also some new additions to the menu. We tried the Almond Crunch Sundae, the Brownie Sunday, the Berry Tart, and the Crème Brûlée.

About Chef Lou-Anne Langlois

Chef Langlois is no stranger to the New England coastal cuisine scene. Some of her earliest memories are intertwined with the sweet aroma of her mother’s homemade, creamy béchamel sauce, with touches of cloves and nutmeg. Langlois, conveys the warm feeling that comes with a special home-cooked meal in each of her carefully crafted dishes. One of her specialties and personal creative culinary favorites is fresh seafood. Langlois has always placed an emphasis on ocean-to-table, as well as locally sourced ingredients, which is easily acquired at Saybrook Point. With her addition to the Fresh Salt culinary team, we look forward to her passion in the kitchen, as well as some new touches to Fresh Salt's classic New England menu

Sinatra Tribute Dinner at Fresh Salt at Saybrook Point

Saybrook Point To Host

Special Tribute Dinner to Frank Sinatra

Fresh Salt at Saybrook Point is hosting a special tribute dinner in honor of the legendary performer Frank Sinatra to be held in conjunction with Old Saybrook’s Seaside Wine and Spirits on Saturday, January 21, 2017.

This creative Jack Daniel’s Family of Whiskey Dinner honors the iconic performer’s special relationship with the forerunner location during the property’s 1960's heydays when Sinatra and his “Rat Pack” were regulars at the Terra Mar Hotel & Yacht Basin.

Yes, that's right! Frank Sinatra kept his boat and entertained friends on a regular basis on the property where Saybrook Point Inn and Marina sits today.

At one time it was rumored that Sinatra was interested in purchasing the Terra Mar where Hollywood royalty like Jayne Mansfield and Tom Jones spent time. In fact, parts of the movie Parrish, starring Troy Donohue and Connie Stevens were filmed here. The hotel eventually fell on hard times, was raided twice for illegal gambling, and finally shut down in 1980, owing a large tax debt. Louis and Mary Tagliatela then purchased the unoccupied hotel at auction, and nine years later, the Terra Mar was replaced with the beautiful Saybrook Point Inn.

The Jack Daniel’s Family of Whiskey Dinner will feature a robust selection of single barrel whiskey and rye by one of America’s most iconic distilleries, expertly paired with a hearty selection of fresh seafood, steaks and poultry creatively prepared by Saybrook Point’s talented Private Event and Banquet Chef Bill Titus and Fresh Salt Chef d’ Cuisine Gesé Rodriguez.

The evening begins at 6:30 p.m. with hors d’oeuvres featuring Crabmeat Salad-Sweet Potato Pancake, Assorted Sushi, and Braised Pork Belly with green tomato jam served with a Jacked-Up Cider Cocktail.

The five-course whiskey dinner begins at 7:00 p.m., commencing with a first course of Ceviche Tartare Duo with Scallop-Tuna Citrus Sauce paired with Gentleman Jack.

The second course features a Lamb T-Bone with Lentil Croquette, Trumpet Mushrooms and Marsala Glace paired with Jack Daniel’s Single Barrel Select.

The third and fourth course feature Almond-Crusted Black Pearl Salmon with Sweet Potato and Caramelized Onion Stack paired with Jack Daniel’s Sinatra Select and Roast Loin of Venison with Celery Root-Cauliflower Puree, Pear Chutney and Brussel Sprout Leaves paired with Jack Daniel’s Single Barrel Rye.

The dinner concludes with a Black Jack Cake served with a warm malted barley-dusted pretzel paired with Jack Daniel’s Tennessee Honey Sauce.

Seaside Wine and Spirits from Old Saybrook will be in attendance, and guests can place orders for their favorite whiskey of the evening at specially reduced prices.

The Jack Daniel’s Family of Whiskey Dinner at Saybrook Point’s Fresh Salt is $94/person plus tax and service charge.  Reservations are required and may be made by calling the Fresh Salt reservations line at 860.339.1318

New Summer Menu at Fresh Salt at the Saybrook Point Inn

Social Media Promotion - Sponsored

One of my favorite restaurants on the Connecticut shoreline, the Fresh Salt restaurant at Saybrook Point recently introduced a NEW summer menu that features seasonal dishes inspired by the harvests of local farmers and fisheries and invited us to visit for a sampling.

It's certainly no surprise that Fresh Salt was recently named Best Upscale Dining in Connecticut by the state’s restaurant industry association, You see, Fresh Salt works closely with its local farmers and artisans to ensure the highest quality of locally grown ingredients from land and sea go into its creative delights. Add to the list of local items - an incredible view of Long Island Sound and a busy marina and you know Fresh Salt is a win-win for dining.

At Fresh Salt, guests will savor fresh, seasonal and local cuisine served in Old Saybrook’s most spectacular setting – the spot where the fresh waters of the Connecticut River meet the salt of Long Island Sound. It's a treasured and historic place, rich in life, and the restaurant reflects that lively diversity. Chef d’ Cuisine Gese Rodriguez offers a simple yet high quality approach to transforming the fresh seasonal ingredients of Connecticut into beautifully inspired dishes.

At our most recent outing to Fresh Salt at the Saybrook Point Inn, here are some of the items we enjoyed, from cocktails to appetizers to entrees to dessert.

Cocktails:

We loved the ingenuity used in all the cocktail creations and I especially enjoyed this tall Foggy Harbor Raspberry Mist pictured below that featured Connecticut's own Foggy Harbor Vodka, muddled with fresh raspberries and mint!

Fresh Salt - The Foggy Harbor Raspberry Mist
(made with CT own's Foggy Harbor Vodka!)

Fresh Salt - Key Lime Martini

Appetizers

With everything from a raw bar selection to hearty pork shanks we tried to sample a wide array of items from seafood to salads to soups. The cowboy loved the heirloom tomato and peach salad, and we've already recreated it several times at home since then! Don't you just love when you get some creative ideas from your favorite restaurants that you can replicate at home?

Jonah Crab Salad
Parsley, Celery, Watermelon, Lemon, Mango Aioli

Chilled Sweet Pea and Cucumber Soup
Fresh Mint, Crème Fraiche

Heirloom Tomato and Peach Salad
Local Heirloom Tomato, Grilled Peach Balsamic Vinaigrette

Barbecue Pork Shanks
Carrot-Celery Salad, Tamarind Barbecue Sauce

Dinner Entrees

You simply can't go wrong with anything at Fresh Salt. The atmosphere is fun and festive and the food is always wonderful. I loved my seafood "ciopinno" stew - and the leftovers the next day were even better after everything had an additional day to infuse flavors!

Fresh Salt Style Cioppino
Shrimp, Scallops, Calamari, Mussels, Swordfish Tomato,
Saffron Essence, Capellini, Crusty Ciabatta, Parmigiano

Mrs. Tag's Swordfish Chop
Olive Oil, Garlic, Lemon Zest, Italian Parsley
Fine Bread Crumbs, Parmesan-Spinach Risotto, Sautéed Zucchini

8 oz Filet Mignon
Garnished with Shoestring Pomme Frites
Charred Romaine Heart, Demi Glaze, Colbert Butter

Pan Roasted Black Pearl Salmon
Roasted Cauliflower, Local-grilled Peach,
Couscous Passion Fruit Beurre Blanc, Lemon Sea Salt

Dessert

The cowboy saw a plate of Baked Alaska pass by while we were eating so he knew that was on his radar and Wendy and I decided to sample the Chocolate Trio for Two. VERY chocolatey for the chocolate lovers only!

Baked Alaska
Chocolate Cake, Espresso Gelato, Torched Meringue
Chocolate-Vanilla-Espresso-Caramel Sauce

Chocolate Trio for Two
Chocolate Cheesecake, Raspberry-Caramel Tart
Chocolate Mousse, Salted Caramel Center

In addition to the items we sampled the new summer menu features the bounty of the season through unique pasta dishes such as “Beggar’s Purse,” which is fresh pasta filled with pear, Taleggio, Robiola, Ricotta, English peas, asparagus, and cherry tomatoes in a white wine sauce; and Cavatappi Primavera with broccoli, asparagus, cherry tomato, oyster mushroom, yellow pepper, and olive oil in a white wine sauce. Entrée prices range from $19.95.

Are you more of a seafood lover? Fresh Salt has you covered with their  fresh seafood and day boats including Pan-Seared Cod served with Mushroom Risotto, Spinach
Cherry Tomatoes Blistered in White Port, and Idaho Trout from the Snake River Canyon served with Crushed Almonds, White Wine-Butter Sauce Sweet Pea and Corn Risotto.

Add classic New England dishes like Clams, Fried Oysters and Seaside Tempura Platter with Golden Brown Scallops, Oysters, Calamari, Zucchini and Peppers served with House Kettle Chips, Cole Slaw, and Chipotle-Avocado Tartar Sauce and you've got a menu that pleases everyone!

Fresh Salt is more than just a restaurant; it is a place to enjoy another’s company and experience the breathtaking views of the Long Island Sound – quietly intertwined with the Connecticut River. The venue’s fresh ingredients and vibrant tastes are available daily for breakfast, lunch, and dinner. And if guests are searching for an intimate evening, Fresh Salt offers light bites and handcrafted cocktails made to perfectly enhance an evening away.

Reservations are recommended, and may be made by calling 860-395-2000.
