Parallel Post in Trumbull CT announces their 2015 Farm to Trumbull Series

Parallel Post’s 3rd Annual Interactive Dining Series Kicks-Off Thursday, June 25 Featuring an Exclusive Author Book Signing Event 
to Celebrate the Locally Anticipated Launch of The Connecticut Farm Table Cookbook



Parallel Post announces the return of its 3rd annual three-part culinary dining series, Farm-To-Trumbull, rolling out on Thursday, June 25 at 7:00 p.m.  Inspired by the season, the event was designed to provide an intimate experience for 30 guests led by James Beard-nominated chef Dean James Max, Executive Chef Chris Molyneux, and newly appointed Chef de Cuisine Erik Waybright. 

As part of this year’s exciting kick-off event, Parallel Post is thrilled to announce their partnership with local Connecticut-based authors Tracey Medeiros and Christy Colasurdo, who will be available for a meet and greet and book signing, to honor their official national book launch of The Connecticut Farm Table Cookbook. Featuring Parallel Post and Chef Dean James Max’s famous Homemade Pasta with Norman Bloom Connecticut Lobster, The Connecticut Farm Table Cookbook is much more than a regional cookbook packed with 150 recipes from the area’s top chefs and local farmers. It's a window into the world of Connecticut’s local farm-to-table movement, brought to life through vivid farmer and chef profiles, regional lore, and stunning photographs.

For $110 per person (including tax and gratuity), guests can whet their palate with welcome cocktails sponsored by the locally-renowned Fishers Island Lemonade; sampling of small bites; a family-style dinner ripe with the season’s finest local ingredients; wine pairings presented by their resident mixologist Greg Genias aka “BootlegGreg;” an all-you-can-indulge dessert bar; and a personally autographed copy of The Connecticut Farm Table Cookbook. For couples seeking an exclusive dinner package including the dinner and one personally autographed copy of the cookbook, the ticket will be priced $200 per couple (including tax and gratuity).

The menus for the series - much like Parallel Post’s weekly-changing restaurant menu – focuses on localism, following the philosophy that natural and sustainable products, and responsible farming, are the key components in ingredient selection.  The menu will be inspired by the farms’ fresh offerings of the day and as such, patrons will be invited to embrace their adventurous side with the Farm-to-Trumbull menu being revealed that evening including dishes infused with the refreshing spirits of Fishers Island Lemonade. 

Parallel Post believes in strengthening the farming community and engages local purveyors for a majority of its ingredients – seafood from Norm Bloom & Sons in Norwalk, Conn. and Foley Fish in Boston, Mass.; meats from Ox Hollow Farm in Roxbury, Conn.; dairy products (including cheese, milk and ice cream) from Farmer’s Cow in Lebanon, Conn.; and greens from Gilbertie’s Herb Gardens in Westport, Conn.

Parallel Post - October Farm to Trumbull Fall Dining Event

The 'last of the season' Farm to Trumbull dining experience hosted by Parallel Post rounded out the year's offerings with wonderful fall flavors.

We started the night on the Parallel Post's patio, where under the twilight sky, mixologist extraordinaire, Greg, was mixing up some great autumn offerings, a mulled warm wine punch, and a bourbon toddy. Both cocktails were housed in hollowed out real fruit containers, with cute little sayings on them.



We also sampled some starters outside as we enjoyed the final days of Connecticut's seasonal weather. Sadly, our New England Indian Summer is coming to a close.

The highlight of the 'small bites' course were the brie and chutney bruschetta bites on perfectly toasted golden french bread.

As we moved inside to our communal dining table, Chef Dean James Max relayed his vision of the nights offerings and the local sourcing from the Trumbull and neighboring community.


We started with a table prepared silky smooth bisque made with Harissa Shrimp.

A beautiful salad, mixed with pomegranate seeds, aged goat cheese, pea tendrils, with a light apple ginger vinaigrette.

And then a nice brussells sprout salad garnished with warmed pumpkin.

Some wonderfully meaty and flavorful Rhode Island Razor Clams.

We also sampled a red and a white wine.

For our entrees we shared some sweet little necks in a tomatillo sauce, served over local fluke.

And a beautifully seared pork loin, with roasted parsnips overstuffed with a heavenly saffron parsnip puree.

In honor of the month of October's dedication to breast cancer awareness, the team at Parallel Post put together Breast Cancer Awareness Cupcakes and a Coffee Cocktail made with Shearwater organic coffee and Onyx Moonshine.

We also sampled a pumpkin bread pudding made with dried cranberries - and an outrageously good white chocolate salted caramel ice cream!



The entire table gave Chef Dean James and his team a standing ovation for another crowd pleasing Farm to Trumbull dinner.

Parallel Post Farm to Trumbull Dinner Series at Gilbertie's Herb Farm

Last week I attended my second Farm to Table experience hosted by Parallel Post on site at Gilbertie's Herb Garden in Easton Connecticut.


Parallel Post has dubbed their Farm to Table series "Farm to Trumbull" as they always feature local members of the farming community and engage local purveyors for a majority of their ingredients – purchasing seafood from Norm Bloom & Sons in Norwalk, Conn. and Foley Fish in Boston, Mass.; meats and proteins from Ox Hollow Farm in Roxbury, Conn.; organic cheeses, milk and ice cream from The Farmer’s Cow in Lebanon, Conn.; and, of course, greens and fresh herbs, from Gilbertie’s Herb Gardens Westport, Conn. outlet.

As soon as we arrived I knew I was in for a treat. The setting was absolutely beautiful!


We started by sampling the cheese platter and chutney platter.



And then moved on to some amazing chilled lobster salad rolls chock full with chunks of fresh lobster.


And then we moved on to the Raw Bar. That's right! The raw bar complete with cherrystones, oysters, and a cerviche (not pictured). I really tried to watch Chef Dean James Max's  trick to oyster shucking.

But, okay, I admit it. It's just plain easier to eat them after someone else has opened them!



Resident mixologist, Greg Gerias, AKA Bootleg Greg mixed up some wonderful specialty cocktails using Tito's Handmade Vodka. I sampled Greg's Pineapple Blueberry Ginger Concoction! So good with the ginger adding just a bit of spiced "heat" to the drink.



And, yes, there was wine to be had! My choice, the Tangent Sauvignon Blanc with citrusy notes.



Before moving on to dinner preparations, Chef Dean introduced Gilbertie's third generation owner and operator, Sal Gilbertie who entertained us with the history of his farm and invited attendees on a tour of his facility that has been in the family since 1901. Before we moved on to our tour, Chef Dean thanked members of his staff for their hard work in bringing this event and his vision to fruition.


The tour was amazing! We learned a bit about the current crops, and explored the hot house. WOW! This was my first time in a hot house, and the temperatures were incredibly warm and perfect for seed germination. The concentrated heat actually allows some seeds to sprout in 24 hours, and we also learned about seed conception vibration ( it's just what it sounds like) and the wholesale distribution and operations and scheduling on the farm.


When we arrived back from our tour a chilled cantelope gazpacho with a dumpling-like crabcake awaited us. So good and light and refreshing. The perfect start to our meal!



Next, a light heirloom tomato salad with mâche. Oh, how I will miss garden tomatoes when the season ends.


A yellow and red watermelon salad with feta and walnuts. A winning combination with the nutty flavors combined with the sweet watermelon and salty feta cheese.



Next we moved on to some dinner sides.

A fresh grilled peaches and organic faro. I love how the grilling brings out the flavors of fruits and have to remember to grill more fruits and vegetable at home!


A creamy chilled pasta salad tossed with zucchini, squash, and grape tomatoes. Made. With. HOMEMADE PASTA! Absolutely incredible!

And a delicious eggplant puree.


What better entree to have at an outdoor setting then some buttermilk fried chicken. So, so good, with a light flaky, slightly salty coating. Oh how I wanted to pick that cast iron pan up and sneak all that chicken home with me!


And of course, when grilling outside, what better to have then some swordfish. Tender. Flaky. So, so good!



After dinner we were treated to a creamy coffee ice cream (coffee from Shearwater Organic Coffee Roasters!


And then some wonderful fresh berry desserts, a berry compote, a berry crumble, and a berry jello.



We had a wonderful relaxing afternoon enjoying Chef Dean, Chef Ali, Chef Chris, and all of the creative staff's hard work and hospitality. Everyone we chatted with enjoyed the food, beverages, atmosphere, but most importantly, the the sense of warm community that enveloped us all.

Our table conversation with our dining companions compared the feeling to nostalgic Sunday dinners and picnics shared with family.

What wonderful memories food can evoke. -- And isn't that what good dining is all about?

Farm to Trumbull - Farm to Table at the Parallel Post in Trumbull CT

The second Farm to Trumbull dinner event for 2014 at the Parallel Post in the Trumbull Marriott was a rip roaring success! From cocktails to appetizers to entrees this farm to table eating extravaganza did not disappoint!

We started the night with some amazing cocktails prepared by mixologist extraordinaire "Bootleg Greg"! There were two special drinks in honor of the Farm to Trumbull theme, the first, a Carrot, Wheat, and Soy Extract and the second a fresh Cucumber Fresca. The best thing about both beverages was that you could enjoy them with or without alcohol and they were equally good each way!

The cocktail hour took place outside, on the Parallel Post's patio and hotel grounds. The weather was perfect for enjoying a warm spring evening and taking in the lush green garden views. Simply lovely! Accompanying the cocktails we enjoyed passed appetizers, consisting of a slightly Spicy Bison Tartar with Farm Fresh Eggs, and a Coffee Cured Salmon on Flax Seed Bread with CT Farm Cheese. When Chef Dean James Max explained his focus on staying local, he told the group that he found this beautiful salmon and prepared it with a "local" twist by curing it in Trumbull's own Shearwater Organic Coffee Roasters gourmet coffee!

Folks, that's what keeping it local is all about! Supporting your local town's businesses and merchants!

After the cocktail hour, our intimate but lively group moved inside to a private room with two community tables where we could still enjoy the outside views away from the bustling restaurant.

Our first course included:

Parsnip Soup with Norm Bloom Clams Salad, that we mixed ourselves being served the salad first, and then the warm creamy broth was poured over the delicate clams and greens.

With dinner we were served two selections of wine, a sweet white by Jam Jar, and a fruity light red by Route Stock. You guessed it, I loved the sweet white wine, of course!



Our entree course was accompanied by four sides:

Grilled Asparagus, Frissee, Manchego Cheese with Sherry Vinaigrette, Warm Purple Potato Salad, Baby Kale, Roasted Walnuts Feta Cheese, Pickled Apricots, and Fiddle Head Ferns.

Our proteins for our entrees were:

Grilled Pork Chop with Lima Beans, Mustard Greens, and Bacon Jam

And a Montauk Roasted tuna English Pea Puree, Roasted Fava Beans, Pearl Onions drizzled with a Wheat grass Vinaigrette.

For dessert we were treated to a house made Campari and yogurt popsicle spritzed with absinthe, a warm strawberry crostata with a goat cheese crumble, a SoCo Vanilla Bean Ice Cream, and Gilbertie's Lavender Crème Brûlée.



After dinner the crowd gave the chefs a much deserved round of applause for a wonderful meal, prepared thoughtfully, elegantly, and creatively. A true Farm to Trumbull success!

From start to finish the Farm to Trumbull event was a fun occassion The communal dining made for a friendly gathering, and many items were served family style. All dishes were plentiful and both chefs and staff were available to answer any questions regarding preparation or ingredients.

Among my favorite sides from the meal were the mildly spicy tartar bite, the creamy light parsnip soup, the purple potato salad and the baby kale with pickled apricots. Each blended wonderful with their fellow ingredients and provided unusual pairings with each other. For dessert, hands down, my favorite was the berry costata. The warm doughie textured pastry accompanied by the slightly sweetened strawberries and the tart cheese was a party in itself. I could eat it everyday and be happy.

The venue itself is warm and modern and I've never been disappointed when visiting. Parking is plentiful, and the lounge and dining area are roomy and comfortable

The menus for the series - much like Parallel Post’s weekly-changing restaurant menu – focuses on localism and follows the philosophy that natural and sustainable products, and responsible farming, are the key components in ingredient selection.  The menu will be inspired by the farms’ fresh offerings of the day and as such, patrons will be invited to embrace their adventurous side with the Farm-to-Trumbull menu being revealed that evening.

Parallel Post believes in strengthening the farming community and engages local purveyors for a majority of its ingredients – seafood from Norm Bloom & Sons in Norwalk, Conn. and Foley Fish in Boston, Mass.; meats from Ox Hollow Farm in Roxbury, Conn.; organic cheeses, milk and ice cream from The Farmer’s Cow in Lebanon, Conn.; and greens from Gilbertie’s Herb Gardens in Westport, Conn.
